Up until the 1970s, this small farm holding in Pigeon produced sugar, rum and coffee. It consists of several parts: the main dwelling; a mill, where the sugar cane was processed; a manioc works for making cassava bread, which is a kind of nutritious pancake made from manioc; a wheel for shredding the manioc or hulling the coffee beans; and finally, a coffee-drying area, where the all-important drying of the precious seeds was performed. The estate is also well-known for its natural thermal spring, which heats the water to a constant 37° C.
